Last few weeks left for Christmas & New year and everyone enjoying their winter vacations either at home or traveling around the world. This time me and my family are absolutely busy baking lots of cookies & cake! This whole process like shopping, baking, cooking & spending time with family makes me much more happier than anything else. As it's all about good food, lots of hugs and the joy of sharing.

My Christmas & New year is absolutely incomplete if I don’t make scrumptious desserts for my family and friends! This Fruit and Nut Caramelized Cake is a perfect Cake to end this year.  Since I didn’t pre-soak my fruits in liquid this year, I have tried the viral trending hacks of soaking dry fruits. I simply take orange juice, and water along with my dry fruits and cook them over low heat till the fruits absorb the liquids and become nice and plump. This takes literally minutes and makes your dry fruits as juicy as pre-soaked!

The key point in the making of fruit & nut cake is the baking time. We bake this cake slowly at a lower temperature so that it becomes really flavorful and the texture is perfect. Usually a normal cake is baked for 30 minutes while this cake is baked for 45-50 minute at 165°C. And make sure to measure everything properly and  chop the nuts before folding them in the batter.

Ingredients

  • 3 dates (chopped)
  • 3 tbsp raisins
  • 2 fig chopped
  • 2 tbsp cranberries
  • 3 tbsp tutti frutti
  • 8 cherry (chopped)
  • 1 cup orange juice
  • 3/4 cup sugar
  • 4 tbsp hot water
  • 1/2 cup oil
  • 1/2 cup curd
  • 1 tsp vanilla extract
  • 2 cup all purpose flour 
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tbsp milk powder
  • 1/4 tsp cinnamon powder
  • 1/4 tsp ginger powder
  • 1/4 tsp clove powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 2 tbsp cashew (chopped)
  • 2 tbsp almonds (chopped)
  • 2 tbsp walnuts (chopped)
Instructions

Take 3/4 cup sugar to caramelized. Keep stirring on a low flame until the sugar melts.
Once sugar melts and turns golden brown, pour in 1/4 hot water and mix well until it is well combined. Keep aside to cool completely
In a pan take raisins, figs, dates, tutti frutti, cranberries, and cherries. Add orange juice and cook on low flame.
Cook until the dried fruits turn soft and juicy. keep aside to cool completely.
In a large bowl, take oil, curd, vanilla extract and prepared caramelized sugar.
Using a whisk, mix well making sure everything is well combined.
Now place a sieve, and add all purpose flour, milk powder, baking powder, baking soda, cinnamon powder, ginger powder, clove powder and salt.
Sieve all the dry ingredients well.
Mix the dry ingredients with wet ingredients & add milk and fold the mixture.
Now add in the prepared dried fruit mixture, cashew, almonds & walnuts. Mix well making sure everything is well combined.
Pour the cake batter into the tin lined with baking paper.
Bake in preheated oven at 165°C for 50 minutes.
Cool the cake completely, and slice it into pieces.
Finally, enjoy fruit and nut cake with a glass of warm milk.
Tips
  • Firstly, If you have enough time, then make sure to soak the dried fruits for at least 6 to 8 hours.
  • Also, you can add dried fruits and nuts of your choice.
  • Make sure to caramelized the sugar without burning it.
  • Additionally, make sure to adjust the batter consistency, don't make it runny.
  • Finally, the Fruit and Nut Cake Recipe can be stored for up to a week when stored in an airtight container.
