Fish Tacos Out of Fish Sticks

The kids want fish sticks but you want an adult dinner, but you don't have the energy to make two separate meals? Well why not make some fancy fish tacos out of those boring fish sticks?

I get the ones from Trader Joe's but any fish stick will do. I just stick them into the air fryer for 10 minutes since I like it nice and crispy.

I chopped up some purple cabbage, jalapeno, scallions and avocado.

I added it on to a flour tortilla. I cut them up so that they were easier to eat.

Then I added all the toppings. I feel like fish tacos go great with some sort of slaw. I happen to love the purple cabbage.

Fish tacos let you go a little more adventurous, really you can add what ever you like to it! I went with a chipotle mayo dressing on top but only because I was out of cilantro lime sauce!

This was an easy dinner when you just don't have the energy to argue with your kids but also don't want to feel like you are eating the kids leftovers! Win Win!

Ingredients

  • 1/2 packet of fish sticks
  • 2 flour tortillas
  • 1 jalapeno
  • 1 scallion
  • 1/2 avocado
  • chopped red cabbage or bag of slaw
  • 1 tablespoon of chipotle mayo or cilantro lime dressing
Instructions

Air fry fish sticks for 10 minutes
Chop into small cubes and place on flour tortilla
add all the toppings and fixings and your favorite dressing
