Chorizo Tacos

Is there anything better than tacos? I celebrated taco Tuesday with these chorizo tacos. This recipe uses simple ingredients, yet they taste so authentic and delicious. Feel free to substitute the chorizo for shredded chicken, or whatever your preferred protein is.


I think the key players in these tacos are the fresh corn tortillas and the queso fresco. These ingredients give them a delicious authentic flavor. Topped with chorizo, onions, cilantro, and jalapeno.


I served these with hot sauces, but you could also serve them with guacamole, salsa, or crema if you'd like.

Ingredients

  • 4 chorizo sausages
  • 1/2 white onion, finely diced
  • 2 cups queso fresco cheese, shredded
  • 6 corn tortillas
  • 1 jalapeno, sliced (optional)
  • olive oil
  • hot sauce to serve (optional)
  • cilantro to garnish
  • lime wedges to serve
Instructions

Remove the casings from the chorizo and cook the chorizo in a pan, breaking them up with a wooden spatula or spoon
Once fully cooked, scoop out the cooked chorizo and set aside, reserving the oil in the pan
Add as many tortillas as you can fit on the pan, then add the cheese and some chorizo to each tortilla
Cook the tortillas until the cheese melts, the bottom of the tortillas should be slightly browned
Set aside and repeat with the remaining tortillas until all cheese & chorizo is used up (approx. 6 tacos). Add olive oil to the pan as needed.
Once all tacos are done, add some of the diced onions, sliced jalapenos, and cilantro
Serve with hot sauce & limes
