In my house, mornings are a quick whirlwind to get out the door on time for day care drop off and heading into the office. I often find that I am ravenous in the mornings and crave a hearty meal first thing to keep me going all day long.


Enter my new favourite meal - the breakfast quesadilla! This meal comes together very quickly and I recommend precooking up some bacon strips a few days in advance so these come together even quicker! Throw in any toppings you enjoy and voila! A hearty but simple recipe to start your day off right!

It all starts with a melty cheese layer….😍

Ingredients

  • 1 whole wheat tortilla (I use a protein tortilla for extra protein)
  • 1 tsp oil olive
  • 1/4 cup shredded cheese
  • 2 large eggs, cooked how you prefer (I liked scrambled)
  • 1/4 cup mashed avocado
  • 2 slices cooked bacon
  • Sriracha, salt and pepper to taste
Instructions

In a large frying pan, heat olive oil over medium heat. Add in tortilla and top with shredded cheese.
Cook for 3-4 minutes over medium heat or until cheese begins to melt and the underside of the tortilla is starting to become crispy.
Add in scrambled eggs, cooked bacon and avocado on both sides of the cheese layer.
Sprinkle on salt, pepper or Sriracha to taste.
Fold the other side of the tortilla over and remove from the heat.
Using a pizza cutter, cut quesadilla into even slices.
Serve hot with salsa, sour cream or extra hot sauce on the side.
