I’m sure everyone has already seen this latest (TikTok) trend. But how can we make this even more exciting? And my answer is: let’s make an English breakfast quesadilla. All you need is some wraps/tortillas, baked beans, some bacon, egg, mushrooms and of course, cheese. This ultimate comfort food is perfect for breakfast, lunch or even for dinner. Anyone who is braver (and of course loves it) can spice up this very simple dish with a good old black pudding as well. The vegetarian version is also very easy to make, just skip the bacon. If you’re throwing a huge brunch party for your friends or family, I guarantee everyone will love it.

  • olive oil
  • 1 egg
  • salt and pepper
  • 1 tortilla
  • baked beans
  • 1-2 mushroom, sliced
  • 1 cup of cheese, grated
  • couple slices of bacon
  • black pudding (optional)

First, let's make the fried egg. In a pan (if you have a small one, especially for eggs/pancakes, use that one) heat some olive oil. Add the egg, season with salt and pepper, cover it with a lid and cook until the white part of the egg is cooked through, but the yolk is still runny.
Make a cut halfway the tortilla and fill it as shown in the picture. Fold it together.
In a grill oven (or if you don’t have one, a waffle maker or sandwich maker will fit perfectly), bake until golden brown.
