Banana Bread is a regular at my home. Both my son and husband love it. That’s why I keep trying different versions of Banana Bread. Sometimes I add cocoa powder, sometimes choco chips, sometimes walnut or sometimes it’s just plain.


This time I baked it using spelt flour. I also added pumpkin seeds, choco chips and coconut chips. It came out nice and soft. Hubby and little one finished half of it within an hour. They loved it so much that I have baked it 3-4 times since then.


For those who are not familiar with Spelt flour, here is a brief introduction. Spelt is an ancient grain, very similar to wheat. It has a lighter texture and is a healthy substitute for all purpose flour.

Ingredients

  • 3 large bananas (over ripe)
  • 1 1/2 cup Spelt Flour
  • 1/2 Coconut Sugar
  • 1/2 Cup Olive Oil
  • 2 tbs yogurt
  • 1 tbs baking powder
  • 1/2 tsp baking soda
  • 1 tbs vanilla extract (optional)
  • 1/2 tsp nutmeg or cinnamon powder
  • 2 tbs pumpkin seeds
  • 2 tbs coconut chips/ large flakes
  • 1/4 cup choco chips
Instructions

Preheat oven to 360 F
Grease a loaf pan and set aside.
In a large bowl mix together all dry ingredients except coconut sugar. Set aside. 
In a large bowl add bananas and mash it using a fork or blender. 
Add yogurt, oil, vanilla extract, coconut sugar. Mix together. 
Add half the dry ingredients and mix. 
Add remaining half and blend well. Do not over mix. 
Stir in choco chips, coconut chips, pumpkin seeds. Save some to put on top.
Transfer cake batter into loaf pan.
Bake at 360 F/ 180 C for 50-55 mins.

      Chocolate chips that you would find in the baking section of your supermarket, like you would find in chocolate chip cookies.
