No Sugar No Flour Banana Bread
Searching for no sugar no flour banana bread? I am excited to share a recipe, no sugar and no flour banana bread with you today.
Ok, so after making the Black Bean Brownies No Sugar and Oat Brownies using my Vitamix, I am kind of hooked on it.
It is so super simple to use! I just throw all of the ingredients in and then mix it until smooth. Put in baking dish and call it done!
How easy is that? No more making sure I mix in dry ingredients and then wet ingredients... I love baking now!
I had 5 very ripe, ok they were black bananas sitting on the counter mocking me... I bought them to make a banana bread... and then I kept putting it off...
I was not sure how I wanted to go about coming up with a recipe for banana bread... and then Mr. Vintage was late coming home one evning so I decided to just jump in, in Cara fashion of course.
The oven was preheated to 350 degrees.
I threw in a package of dates and all 5 peeled bananas. I did not want to come up with another recipe so I decided to just do it! I flipped the switch and let the Vitamix do it's mixing, chopping magic!
Then I added in the oats, baking soda, salt, vanilla, and eggs into the batter.
Once the batter was smooth, I poured it into our Wilton bread pan.
Banana Bread
- 5 ripe bananas
- 1 8 oz package dates
- 1 1/2 c oats
- 1 t vanilla
- 1/2 t baking soda
- 1/2 t salt
- 2 eggs
Experimenting in the kitchen can be fun and then when something does not turn out, it can be a bust...
I never thought 20 years, or even 5 years ago I would make up my own recipes. Working with natural ingredients in their most basic form has made me really step outside my comfort zone, and I have to say I like it.
I never thought I would be able to enjoy baked goods again with the food allergies and restrictions I have, but that is not true. I actually think the bakes goods I have been making taste better than store bought items.
I am having fun, experimenting, and sharing with all of you. Who knew it would all come together like it has? I never really intended to share the concoctions I made, but then I thought why not?
I love getting recipes from friends, and you have all become my friends over the months. This blog has been one good thing to come from covid. I am pretty happy it has turned out the way it has.
You could add nuts to your banana bread, but I am not a nut lover. I like them separate, but not really in breads or cookies.
I love this little Jadeite cake plate by Mosser Glass. It is the perfect size for cookies or sliced bread.
I had my mom try this recipe and she loved it. We all know that is a surprise since she is not a fan of gluten free foods. I took that as a win, and decided I needed to share this with you as soon as possible! Let me know if you give this one a try.
