Chocolate Chunk Banana Bread

No matter how many times I bake more and more banana bread and try a new recipe, every time my friend tests it, she always says that this was the best banana bread that I baked in my entire life so far, and no other recipe can surpass that. Please don't look at the picture, as I mentioned, this is one of the very first recipes - and pictures - of my life, if I remember correctly I have a childhood sweater tied around a column as a background. If you like the recipe, I promise I’ll make it again in the near future and try to shoot a more aesthetic picture of it.

Ingredients

  • 250 g spelt flour + extra for flouring the pan
  • 3 tsp baking powder
  • a pinch of ground star anise
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • a pinch of salt
  • 2 eggs
  • 70 g brown sugar
  • 70 g butter/margarine * extra for greasing
  • vanilla extract
  • 3 overripe bananas, mashed
  • 150 dark chocolate, chopped
Instructions

Preheat oven to 180C.
Prepare a loaf pan by buttering and flouring the bottom and the sides.
In a small mixing bowl, combine the flour, baking powder, salt and all the spices.
In a large mixing bowl whisk together the eggs and sugar. Add the smashed bananas, butter and vanilla. Mix until combined.
Fold the wet and dry ingredients together, mix in the chocolate chunks as well.
Pour the batter into the prepared loaf pan and smooth it out. Sprinkle the top with additional chocolate chunks if desired.
Bake until golden brown for about 50-55 minutes.
Serve warm or at room temperature.
