No matter how many times I bake more and more banana bread and try a new recipe, every time my friend tests it, she always says that this was the best banana bread that I baked in my entire life so far, and no other recipe can surpass that. Please don't look at the picture, as I mentioned, this is one of the very first recipes - and pictures - of my life, if I remember correctly I have a childhood sweater tied around a column as a background. If you like the recipe, I promise I’ll make it again in the near future and try to shoot a more aesthetic picture of it.
Chocolate Chunk Banana Bread

Ingredients
- 250 g spelt flour + extra for flouring the pan
- 3 tsp baking powder
- a pinch of ground star anise
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- a pinch of salt
- 2 eggs
- 70 g brown sugar
- 70 g butter/margarine * extra for greasing
- vanilla extract
- 3 overripe bananas, mashed
- 150 dark chocolate, chopped
Instructions
- Preheat oven to 180C.
- Prepare a loaf pan by buttering and flouring the bottom and the sides.
- In a small mixing bowl, combine the flour, baking powder, salt and all the spices.
- In a large mixing bowl whisk together the eggs and sugar. Add the smashed bananas, butter and vanilla. Mix until combined.
- Fold the wet and dry ingredients together, mix in the chocolate chunks as well.
- Pour the batter into the prepared loaf pan and smooth it out. Sprinkle the top with additional chocolate chunks if desired.
- Bake until golden brown for about 50-55 minutes.
- Serve warm or at room temperature.
