  • Vanilla Ice Cream or Coconut Ice Cream ( Coconut Ice Cream is a great dairy-free alternative and it makes the smoothie super creamy. )
  • Fresh Mint Sprigs
  • 1-2 scoops Collagen Peptides ( This brand is my favorite, any flavorless Collagen option works well )
  • A handful of ice

Ingredients

  • 2 c Organic spinach
  • 1 c Unsweeted coconut milk
  • 1 teaspoon Organic peppermint oil
  • 1 teaspoon Vanilla extract
  • 1 Avocado, halved & pitted
  • 1 bunch Organic, fresh mint
  • 3 scoops organic vanilla ice cream (sub in coconut ice cream if dairy-free.)
  • 2 scoops collagen peptides
  • 1 tablespoon coconut butter
  • 1 teaspoon  honey use as much sweetener as you prefer.
  • 1 c Ice
Instructions

Place all of the ingredients in the blender and blend on high for 5-minutes. Give the fresh mint leaves times to blend into the smoothie. Use a blender spoon throughout the blending process.
Pour the Shamrock Shakes in tall glasses and top with dark chocolate chips and garnish with more fresh mint leaves.
