Pineapple Ginger Drink

This pineapple ginger drink is spicy, slightly sweet and so refreshing! It is very summer-ready indeed! This drink consists of a ginger syrup blended with pineapple. I love how frothy it is on top since it is blended with the pineapple.

I used a whole pineapple for this recipe. You can alternatively use a large can of pineapple chunks which is worth about 4 cups of pineapple.

The ginger syrup consists of boiling peeled ginger and sugar and water. I used packaged frozen ginger since that's easier. All you do is strain and combine it with the pineapple. It makes the drink very sweet and enhances the ginger taste. Syrup is also smoother feel than blending the ginger.

This drink is best served over ice, enjoy!

Ingredients

  • 500g frozen ginger
  • 3 cups granulated sugar
  • 2 cups water
  • 6 cups additional chilled water
  • 1 whole pineapple, peeled and chopped 
  • Pineapple rings to serve
  • Tray of ice cubes
Instructions

Boil the ginger, sugar, 2 cups water in a saucepan for 30 minutes.
Strain this syrup and blend with the pineapple and water. 
Strain over ice cubes in tall glasses and garnish with pineapple rings.
