Summertime weather calls for refreshing summertime cocktails on the back patio! This cocktail is really flexible with the type of alcohol you can use: I would suggest vodka or gin, but tequila would work as well. Why not? You'll want to start by making a basil simple syrup. Simple syrup is just equal parts water and sugar, boiled together until the sugar is dissolved. From there, you are only limited by your imagination what kind of syrup to make. Infuse herbs, fruit, or aromatics into the hot syrup, then cool before using. Store in your fridge in a jar for a week or two! No strawberries? Try raspberry lime instead, or even blueberry lemon! You can do this!

Ingredients

  • For simple syrup (see tip below): 1 c water, 1 c sugar, 1 large stem basil
  • Juice of 1/2 lime
  • 1-2 strawberries, chopped
  • 1 oz basil simple syrup
  • 1.5 oz vodka or gin (tequila would work too!)
  • Extra strawberries for serving and garnish
  • 4 oz club soda
  • Lime wedge for garnish
  • Basil leaf for garnish
Instructions

In a cocktail shaker, combine the juice of 1/2 a lime (toss the juiced lime in too!), 1-2 chopped strawberries, 1 oz basil simple syrup (see tip below), 1.5 oz vodka or gin.
Muddle everything for a minute or two, add ice and shake shake shake.
Strain into a glass w fresh ice, toss in more chopped strawberries and top with about 4 oz of club soda.
Garnish w fresh strawberry, lime and basil.
Tips
  • Simple syrup is a great ingredient to have on hand for any cocktail! Combine 1 c water and 1 c sugar in a pot and bring to a boil. Just make sure all the sugar is dissolved! Then add any flavors you like and let it steep in the hot liquid: fresh herbs like basil, thyme or rosemary. Citrus peel. Berries. Ginger or lemongrass. Use your imagination! Allow to cool before using in your cocktails. Keeps in fridge for 1-2 weeks.
