You know when you make a meal so good that you wish you could have it everyday! This is the one for me ❤
It's a savory mushroom stew made with a ton of hidden veggies and white wine, so you really can't go wrong here. It's so good, so delicious and so healthy. When I was a little girls, I didn't really like mushrooms that much and tried to avoid ordering anything that contained them, but now that I'm older and have a more diverse palate I've developed a liking for them. Now I enjoy mushrooms in all shapes and sizes. I really like oyster mushrooms and often use them as a replacement for chicken.

Mushroom and Vegetables Stew

Ingredients
- Grapeseed oil
- 1 bag of mini onions
- 3 Garlic cloves minced
- Multicolor bell peppers thinly sliced
- 1 potato diced
- 1 package Large white mushrooms
- 1 package Oyster mushroom
- 1 bunch asparagus
- 1 package of baby spinach
- 2 cups white wine
- 1/2 cup multi purpose flour
- 2 Bouillon cubes
- 1/4 cup water
- Salt and pepper to taste
Instructions
- In a large skillet drizzle grapeseed oil
- Sautee onions, garlic, bell peppers and potatoes until they soften.
- Add mushrooms, cover the mix and let it simmer on medium heat until the mushrooms turn golden brown and are fully cooked.
- Add asparagus, bouillon cubes and white wine and let it simmer for a few minutes.
- Then add water and flour to the mix to thicken it.
- Cover it again and let it simmer for an additional 3 to 4 minutes on low heat.
- Do a taste check and adjust salt and pepper
- Then finally add spinach as it cooks right away.
- Give it a few tosses while the spinach is still green then serve it hot with a side of wild rice or on its own

- Serve warm with wild rice or a side of pita bread

Looks and sounds DE-Lish.... it's gonna take MORE than 5 minutes prep time to cut up all the veggies, unless they are already prepped though.
can I substitute the white wine for something non alcoholic?
