My mom used to add shrimp to her pork wontons. The latter imparts a slight sweetness and lightness to the filling. Like Mom, I love to incorporate shrimp into pork. The combo makes a fabulous and comforting wonton soup.
Time permitting, I like to make homemade broth from pork bones and shrimp shells. But I’m often pressed for time and usually resort to using canned chicken broth, which is still delicious.
I’ve given instructions to make broth from scratch and from canned. Choose what works best for you if you decide to try out the recipe. Both versions will produce a delicious soup to warm you up on cool spring days.
Not seen in these photos is the fried shallot topping. It takes just minutes to make, and it adds little bites of crispiness, sweetness, and nuttiness. I highly recommend this garnish. Don’t forget about it like I did when I took these photos!
