The Best Grilled Chicken

I’m not even kidding when I say this is The Best Grilled Chicken! The marinade is what makes it! I’ve been making this marinade for quite a few years now. I love the balsamic vinegar in this recipe. Once the chicken hits the grill, the balsamic vinegar caramelizes giving the chicken a nice sweet crispy outside.


This recipe can’t get any easier! First, chopped rosemary, minced garlic, dijon mustard, balsamic vinegar are mixed in a bowl with some good quality olive oil. Second, chicken breasts are submerged in the marinade for up to 8 hours so they soak up all the wonderful flavors. Lastly, once the grill is hot and ready to go, the marinated chicken is grilled to perfection! Serve with a potato salad, some greens, and you have the perfect summer meal!

Ingredients

  • 1# Chicken breasts
  • 2 tbsp Olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp Fresh rosemary, finely chopped
  • 1 large clove of garlic, minced
  • 1 tsp Salt
  • Pinch of black pepper
  • 1/4 cup Balsamic vinegar
Instructions

Combine the olive oil, Dijon mustard, balsamic vinegar, fresh rosemary, garlic, salt and pepper in a bowl and mix
Add the chicken breasts and cover with the marinade. Cover and place the bowl in the fridge and marinate for a minimum of one hour
When ready to cook, preheat the grill and grill each breast for about 7-8 minutes on each side or until the internal temperature reaches 165 degrees
Once cooked, remove from the grill and allow to rest for five minutes before cutting and enjoying
Tips
  • The chicken can be marinated for up to 4 hours. The longer they are marinated, the more flavor

    Don’t have a grill. How else can i do it?

      Hi, I made this recipe this evening. The weather here in New England being New England was too cool to fire up the grill. So, I heated up my cast iron grill pan, smoking hot, and grilled the chicken that way. It came out great. I would make sure the chicken is not too thick so it cooks evenly. It came out great. My wife and I both declared it a winner. I’ll cook this recipe again. Make sure you turn the exhaust fan on, you’ll need it.

    Sounds really good. But I’m confused on how long to marinate. Your lead in story says for up to 8 hrs. But then in the Tips section it says for up to 4 hrs.
