Enter is delicious meal idea - zucchini pasta bake!


It's super quick to prepare, super tasty and makes a big batch so perfect for left overs. If you are looking for a low carb meal (if that is your thing!), this recipe will fit the bill.


This recipe can be broken down to 3 parts; chopping your zucchini, preparing your sauce and shredding your cheese. That's it! This dinner really hits the spot. Serve it up with a side salad or some crusty bread for a quick weeknight meal. YUM.

Ingredients

  • 4 large zucchini, chopped in 1 inch slices (about 6 cups total)
  • 1 Tbsp oil
  • 1 tsp each; salt, pepper, garlic powder
  • 1 lb lean ground beef
  • 1/2 white onion, diced
  • 2 cloves garlic, minced
  • 1 jar your favourite pasta sauce (about 500 ml is needed)
  • 2 cups shredded cheese
Instructions

Preheat oven to 375 degrees.
In a 9 X 13 baking dish, place chopped zucchini. Drizzle with 1 tablespoon for olive oil and sprinkle with salt, pepper and garlic powder. Use tongs to coat zucchini and set aside.
In a large frying pan, brown ground beef over medium high heat until browned. Drain off fat and place back into the pan.
Next, add in onion and garlic to the ground beef. Sautee until tender, about 5-6 minutes.
To the ground beef mixture, add in pasta sauce. Stir to combine and heat through over medium high heat.
Once the sauce is hot, pour over the prepared zucchini. Give everything a stir.
Top with shredded cheese.
Bake uncovered for 15 minutes then broil on LOW for 3-4 minutes until cheese is golden brown and bubbling.
Remove from the oven and serve hot. Enjoy!
