Zucchini Pasta Sauce

It’s no mystery that pasta is a staple in Italian cuisine. A lot of families I know will eat it at least once a day, usually for lunch. We are definitely not one of those families as I would just get too bored with cooking the same thing every day, so we stick to once a week and even then I try to mix it up with a different sauce each time. I always try to make our family meals as nutritionally balanced as possible, incorporating carbs, protein and veg. That’s what this super simple and quick recipe does!

Ingredients

  • 2 cups of pasta (in the shape that you prefer. It works super well also with Orzo pasta)
  • 3 zucchini
  • 3/4 cup cream cheese
  • 1 small onion
Instructions

Grate the zucchini and gently fry them in a pan with the cut onion, until they are cooked and soft.
Add the cream cheese and mix. If you find it too thick, add one tbsp of cooking water from the pasta.
Once the pasta is cooked, drain and mix everything together.

      Thanks for the feedback. I forgot to change to change it to cups, as, living in Europe, my original recipe is in grams. I have now changed it so it's easier to follow for Americans. Hope it helps
