Whole Roasted Sweet Potato

Every time i try a whole roasted sweet potato, i wonder why i make them any other way! The skin turns papery thin in the oven and the potato itself is sweet and decadent, needing little else to be an entire side dish on its own. Here, we add a tangy citrus glaze that we add on to the sweet potatoes after the initial bake in the oven. The result is a flavour-filled beautiful dish to present and enjoy, and its so easy to make! I created this as a side dish to enjoy on the holiday of passover(its gluten free), but it works well to serve alongside a summer grilled chicken, or a whole roast chicken, like this one!

Ingredients

  • 8 baby sweet potatoes(look for the smallest ones available), or 4 smaller sweet potatoes
  • 2 Tablespoons olive oil 
  • ½ teaspoon salt 
  • ½ cup orange juice
  • 1 strip of orange peel  
  • 1 teaspoon honey 
  • 1 sprig of thyme, plus more for garnish 
Instructions

For the sweet potatoes:
Preheat oven to 175º. 
Fit a baking tray with parchment paper.
Scrub the sweet potatoes and dry well.
Place them on the baking sheet and drizzle over the olive oil and salt. Rub to evenly coat.
Roast the sweet potatoes until the skin is papery thin and the potatoes are soft when pierced with a fork, 35-40 minutes for baby sweet potatoes, 60 minutes for larger sweet potatoes.  
While the potatoes are roasting, place orange juice, honey, and thyme leaves in a small saucepan set over medium heat. Bring to a boil, lower the heat, and simmer until the sauce has thickened, 10-15 minutes. 
Remove the sweet potatoes from the oven and brush each potato with the orange glaze. Return them to the oven for another 3 minutes to bake on the glaze. Remove the sweet potatoes from the oven. If you are using small potatoes, leave the garlic in to cook for an additional 15 minutes(so it cooks for 1 hour total).
Pile the sweet potatoes on top of each other(if you are using baby potatoes). Sprinkle over fresh thyme leaves. Use a peeler to peel a strip of orange peel and then thinly slice it. Use for garnish.
