Okay so here starts the next chapter in my story, life on the road in Canada. 🚐 And I’m going to share with you all my delicious campsite meals, which you can make at home!


So here we start with a super easy hoisin vegetable stir fry on nutty brown rice, served at the gorgeous river in similkameen, okanagan.


This dish is packed with goodness for you, a healthy brown rice for your carbohydrate, lots of fresh and healthy vegetables, and a super tasty sauce to accompany it all!


This meal is the perfect mid week quick recipe which can be on the table in maximum 20 minutes!

Hoisin Vegetable Stir Fry

Ingredients

  • 1 onion
  • 2 cloves of Garlic
  • 1cm thumb of Ginger
  • 1 Pepper
  • 1/2 Courgette
  • 1 or 2 Carrots
  • 1/2 Broccoli (florettes and stem finely sliced)
  • 1/2 jar blue dragon hoisin sauce
  • brown rice
  • sesame seeds
Instructions

Finely slice up your vegetables into strips, and sweat them down in a pan, onions then garlic and ginger, then peppers, carrot and broccoli stems then courgette and broccoli.
2. Cook your brown rice according to instructions
3. Add in a dash of water and let the veg steam for a few minutes until evaporated.
4. Add in half your jar of sauce and simmer for a few minutes
5. Top with sesame seeds and serve! Tag me in your creations
