  • 1/2 butternut squash 
  • passata sauce with some paprika (optional) and salt
  • Breadcrumbs mixed with nutritional yeast and fresh rosemary 
Peel the butternut squash and cut into sticks.
Dip in the passata sauce then roll the fries in the breadcrumbs mix.
I had run out of Parmesan cheese so I’ve used nutritional yeast instead and the result was equally delicious.
Straight in the air fryer for 10 minutes at 180 degrees C (350 degrees F).
They turn out super crunchy!

    Is there an easy way to cut squash?

      I am not sure how for this recipe, but you can cut the squash in half and scoop out the seeds, then bake it in the oven at 350 degrees for one hour and then scoop out the meat and throw away the skins. I use this method now to make squash because it is so much easier.
