Smashed Grilled New Potatoes

It has been so hot and humid here in Michigan. So there has been a lot of grilling happening here at Curly Willow Acres. We are a big meat and potatoes family. These potatoes are something a little different that our normal, I wanted to change it up a bit. We love a good mashed potato and we love fried potatoes. I put the two together to make these smashed grilled potatoes. They get crispy on the outside but stay creamy on the inside a really good surprise. Please don't judge me on the butter, it just makes everything taste better. Plus the potatoes are ready in the garden so that makes these extra tasty.

I serve them with sour cream.

Ingredients

  • About ten small new potatoes
  • 1/4 c butter cut in pieces
  • 3/4 t Onion powder
  • 1/2 t Garlic powder
  • Salt and pepper to taste
  • Sour cream for serving
Instructions
To prepare the potatoes
Wash and boil the potatoes until tender.
Spray some aluminum foil with cooking spray.
Add the potatoes and smash slightly with a fork.
Sprinkle with the onion and garlic powder.
Add the salt and pepper.
Put the pieces of butter on the top of the potatoes.
Wrap in the aluminum foil.
Grill for at least 15 minutes keeping an eye on them.
Serve with chives and sour cream on the side.
Tips
  • You can use any small potato.
  • Add any seasonings you would like or some onion in the packet would be delicious too.
