Instant Pot Mashed Potatoes

I've only recently started to really learn how to use an instant pot and wanted to make some easy recipes at first. So I converted my italian mash potatoes recipe and found it so easy to make it this way that I've now been making it for almost every meal.


Italian mash potatoes I find differ from others as they don't typically have butter but use only milk, making them lighter. I also add a secret ingredient to mine, which is optional but adds extra flavour, or you can also choose other spices to add flavour to it, such as nutmeg or other.

Ingredients

  • 5 cups peeled potatoes
  • 1 cup water
  • 1 cup milk
  • 1/2 tsp salt
  • Pepper to taste
  • 1 tbsp mayonnaise (optional)
Instructions

Chop the potatoes in 1 inch pieces.
Add the water to the instant pot and place the potatoes in the steamer accessory.
Pressure cook on high for 8 minutes.
Once finished, open, transfer to a bowl and mash the potatoes with either a masher or fork. They should come apart easily. You can also use an immersion blender if you want them super smooth. Whilst still hot add the milk and seasoning and whisk quickly. You may need to adjust the milk depending on your desired consistency. If you find it too runny for your liking you can also saute' quickly to make it thicker.
Optional extra: for more flavour add a tbsp of mayonnaise.

    You always need at least one cup of water or clear liquid in the instant pot for it to come to pressure.

      Hi. I apologise for the confusion. I believe I converted my measurements wrong, I use MLs not cups to cook and must have gotten than wrong. I amended, thanks for the flag

    I’m not Italian, but I’ve been making my mashed potatoes like this for years, using butter, milk and mayonnaise. Occasionally , I’ll put a clove of garlic in while cooking the potatoes.

      Great idea the mayonnaise! In Greek cuisine and we also use butter and milk but instead of mayonnaise we add nutmeg and even cinnamon for more flavor. When we add garlic but not milk we call it skordalia (garlic dip, skordo means garlic)
