Instant Pot Quick Mashed Potatoes

My family loves mashed potatoes and we eat them often. One of our favorite ways to cook them is in our Instant Pot.


These Red Mashed Potatoes are made with scrubbed potatoes with the skins on.


Leaving the skins on is a really healthy option as potato skins are quite nutritious.


You can serve this side dish as mashed potatoes in a large serving bowl. Or if you like, serve individually without mashing.


Let everyone add their own favorite toppings such as cheese, parsley, bacon bits, chives or whatever you like.


Any leftover Instant Pot Mashed Potatoes are easily stored in a covered container in the fridge to make another meal even quicker.

Cooked in an Instant Pot, these potatoes make a delicious and quick side dish.

Add water to the Instant Pot, then set potatoes on top of the steamer.

Put the top on the Instant Pot, then turn the valve to Sealed position.

Set the timer for 30 minutes.

After releasing the pressure, remove potatoes using tongs.


Serve individually so everyone can put on their favorite toppings!

Ingredients

  • 12 potatoes scrubbed with skins on
  • 1 cup water
  • 1/4 cup butter
  • 1/4 tsp parsley
Toppings for Instant Pot Smashed Potatoes (optional)
  • grated cheese
  • sour cream
  • bacon bits
  • chives
Instructions

Pour one cup water into the instant pot insert. Place the steamer basket inside.
Add in washed (skins on) potatoes. Place lid onto the instant pot.
Turn valve on lid to sealed position.
Press pressure cook or manual button and set timer to 30 minutes.
It will take about 10 minutes to come to pressure then cook another 30 minutes.
Once the pot stops counting and beeps release the pressure from the valve on the lid.
Serving Instant Pot Mashed Potatoes
Serve individually or lightly mash the potatoes in a large bowl
Season with salt and pepper and sprinkle parsley over top.
Serve toppings separately in dishes so guests can choose their own.
Tips:
If you want you can add more water and then keep on the keep warm setting. It does make the skin more moist so just be aware.
