Greek Air Fryer Wedges

I jumped on the Air Fryer bandwagon about a year ago and I have to admit there are certain things that just taste better when fried in some oil....lol! But these wedge fries are not one of them.


All you need is some delicious Mediterranean seasoning, kosher salt, freshly ground black pepper and a tablespoon of olive oil. They come out crispy on the outside but still a bit soft on the inside. The trick is not to over crowd the basket. You can give them a shake halfway through the cooking process to ensure they are getting crispy all the way around and that they don't burn on one side.


These are a perfect side to your burgers or hot dogs.... but I particularly love them as part of my fish and chips dinner!

Ingredients

  • 5 large russet potatoes, scrubbed, cut into 1 inch wedges and soaked
  • 2 tbsp Artisan Blends Mediterranean Mix (link below)
  • 2 tsps kosher salt
  • 1/2 tsp fresh ground black pepper
  • 1 tbsp olive oil
  • 1 tbsp lemon zest
Instructions

Place the cut wedges in a large bowl of cold water and let them soak for about 25-30 minutes to release some of their starches. Drain and pat dry well with paper towels so that all the wedges are really dry.
In another dry mixing bowl, add the potato wedges, Mediterranean Mix, kosher salt and freshly ground black pepper with 1 tablespoon of olive oil. Toss to coat.
Place the potatoes in the basket in a single layer (I have the Ninja Air Fryer that has the flat basket). Then, cook on the air fry setting at 390° for 30 minutes. Every air fryer is slightly different, so go with what your air fryer says.
When the potatoes are done in the air fryer, transfer to a parchment paper lined bowl and sprinkle the lemons zest over top and serve.
