Let me introduce my Summer Power Bowl: Greek Style 🇬🇷


This bowl is full of Greek flavours which will make your mouth explode.


But what’s included?


Homemade falafel balls, garlicy tzatziki, pickled onions, sweet potatoes pieces, griddled courgettes and halloumi on a bed of fresh salad 👌


This dish really is an epic combo you will definitely want to try! It’s the perfect dish to make for a dinner party, to wow your guests with these amazing flavour combos.


You could also make extra and save some of the elements for a later date. Use your extra falafels in a Greek inspired wrap for lunch.


If you have any extra pickled onions, they will last in your fridge for a week as the pickling process will keep them fresh and full of flavour.

Ingredients
Falafels
  • 2 tins of chickpeas
  • 5 cloves of garlic
  • 2 tsp ground coriander
  • 1 tsp rosemary (ground)
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1 lemon squeezed
  • a dash of water for blending.
Pickled onions
  • 1 red onion
  • 1 cup vinegar
  • 1/4 cup sugar
  • 1 tsp salt
  • 1/2 lime squeezed
Tzatziki
  • 1 cup Greek yogurt
  • 1/2 cucumber
  • 2 garlic cloves minced
  • handful of mint leaves finely chopped
  • 1/2 tsp salt
  • 1/2 lime squeezed. 
Other
  • 1 sweet potato
  • 2 courgettes
  • 1 lettuce
  • cherry tomatoes
  • 2 packs of halloumi
Instructions
Falafels
Add all of your ingredients into a blender.
Blend until all is combined.
Roll into equal sized balls and leave to cook for approx 30 minutes
Air fry for 15 minutes until brown. 
Pickled onions
Thinly slice 1 red onion and put into a Tupperware with all other ingredients.
Leave onion to soften for at least an hour
Drain onion slices on a napkin before serving. 
Tzatsiki
Grate your cucumber and then pressed in some kitchen towel to remove all water
Now finely chop your garlic cloves.
Add to a bowl your cucumber, minced garlic, and all other ingredients and mix well.
Keep refrigerated until serving.
The rest
Cut your sweet potato into small cubes, toss in some olive oil and a little salt and pepper and air fry at 180 for approx 10/15 minutes until crisp.
Cut your halloumi into 1cm strips and fry in a pan on both sides for a few minutes until brown.
Wash your lettuce and slice in thin strips.
Slice your courgettes in thin strips and griddle on both sides until brown charred lines appear. Sprinkle a little salt on after.
Chop cherry tomatoes in half.
Assemble your power bowl by adding in all components.
