Easy and Quick Eggplant Parm Recipe

If you like eggplant parmesan, I have a recipe to share with you that is quick and easy. You can see more of my crazy creations here

Ingredients for this recipe

  • Eggplant
  • Spaghetti Sauce
  • Eggs
  • bread crumbs
  • Cheese

Slice your eggplant into 1/4″ slices, and place on a baking sheet lined with parchment paper.


Bake at 375 degrees for 7-8 minutes.


Whisk an egg in a bowl while the eggplant is baking.

Remove the eggplant from the oven.


Dip the egg plant in the egg and then in bread crumbs and place back on the baking sheet.


Bake another 10 minutes until they start to brown.

Remove the eggplant from the oven.


Add a spoonful of spaghetti sauce on the eggplant, and then a slice of cheese on top. You can also use shredded cheese.


Place back into the oven until the cheese has melted.

Let cool slightly and serve.
