I love a good casserole! This casserole is a family favorite and it's perfect for around the holidays. There is so much flavor going on in this simple dish. Ready?! Let's do this!

This is where the flavor happens! Start by sauteing the peppers, onions and garlic with cooking spray in a medium pan on medium heat until tender. Set aside.

Mix all the ingredients except the cheese together in a medium bowl. Mix until combined.

Now in your buttered casserole dish, pour the mixture in and spread out evenly. Cover with foil andake at 375 for 50 minutes.

Remove the foil and top the almost fully baked casserole with the cheese. Return to the oven for 5 minutes.

Look at that golden brown delicious Fiesta Corn Casserole! Yum! Let this cool for about 15 minutes before serving. I think this will be a new family favorite in your house. This dish would be perfect for a family gathering, Thanksgiving side dish or for any other holiday get together.

Ingredients

  • 1 can corn, drained 
  • 1 can cream style corn
  • 1 box Jiffy Vegetarian corn muffin mix
  • 1 egg
  • 1/2 stick butter, melted
  • 1 cup sour cream
  • 1/2 red pepper and 1/4 onions, sautéed
  • 4 cloves garlic, sautéed
  • 1/4 tsp. Chili powder
  • 1/4 tsp. Paprika 
  • Black pepper
  • 1 tsp. Parsley
  • Cooking spray
  • 1 cup sharp cheddar cheese
Instructions

Preheat oven to 375F. Sauté the peppers, onions and garlic on medium heat until tender. Set aside. Butter a oven safe casserole dish and set aside. In a separate bowl combine all ingredients except the cheddar cheese. Pour mixture into greased dish. Cover with foil and bake for 59 min. Remove the foil and top with cheese. Cook for another 5 minutes. Let cool for 15 minutes and serve.
Tips
  • For a spicier dish, add in diced jalapeños.
