There’s something about that crunch, right?


Since starting Trim Healthy Mama in 2016, I’ve been searching for healthy options to satisfy my crunchy snack cravings.


There are lots of options that fall under the S (satisfying fats) umbrella: Whisps parmesan crackers, moon cheese, nuts, and pork rinds to name a few.


But there aren’t as many options if you want something that’s an E (energizing carbs).


And most of those E options kinda taste like cardboard…


Until now!

Let me introduce you to my new favorite healthy THM E meal snack: air fryer chickpeas.


They’re so good!


I’ve become a little obsessed with making air fryer chickpeas lately!


Why Make Air Fryer Chickpeas?

First, they are so healthy for you! Chickpeas, or garbanzo beans, are a member of the legume family.


They have a nutty flavor so they really are an ideal snack!


Not only are they full of fiber, they’re high in protein.


And there’s even evidence that they can improve your digestion and help with weight management.


Talk about a super food!

How to Make Chickpeas in an Air Fryer

My favorite thing about air fryer chickpeas (besides their yummy flavor and satisfying crunch) is how easy they are to make!


These are one of those pop them in your air fryer and let it work its magic kinda recipes.


Some people use dried chickpeas to make them.

That requires soaking the chickpeas for a while to soften them up so they don’t break one of your teeth.


But my air fryer chickpeas require nothing but a can opener and a colander.


Simply open a can of chick peas and pour them into a colander to drain off the liquid.


Give them a quick rinse.


And dump them onto your air fryer’s basket.

Set your air fryer to 400 degrees F, and pop your chickpeas in for 5 minutes.


This will dry any excess moisture from the outside of the garbanzo beans.

Remove the tray and lightly mist with cooking spray. I like using coconut oil cooking spray when I’m making a recipe with sweet seasonings like this one.


Return the tray to the air fryer for another 10-12 minutes, until they’re dried to the crunchiness you prefer.


While they’re cooking, mix together the THM Gentle Sweet or equivalent sweetener of choice and the pumpkin pie spice in a small bowl.


You should give them a shake every 5 minutes.

All done!


I like adding the seasoning after they’ve cooked, especially when I’m using a blend that includes a sweetener.


This prevents the seasoning from falling through the basket and burning.


Once they’re done cooking, add them to a bowl and give them another light spray of cooking spray.


Then pour your pumpkin spice seasoning blend over top.

Toss the chickpeas so the seasoning coats them.

And that’s it!


Seriously easy.


And delicious!

The hardest part is not eating all of them at once!


How to Store Air Fryer Garbanzo Beans

Put your Pumpkin Spice Chickpeas in an airtight container to store them.


You can get fancy and use a mason jar.


Or any lidded storage container.


Honestly, you can even use a zippered storage baggie!


They’ll stay fresh and crispy and crunchy for about a week.

Ingredients

  • 15 oz canned chickpeas
  • cooking spray
  • 1 Tbsp THM Gentle Sweet (or equivalent low carb sweetener of choice)
  • 1 tsp pumpkin pie spice (can substitute 1/2 tsp cinnamon, 1/4 tsp ground ginger, 1/4 tsp ground nutmeg, 1/8 tsp ground allspice)
Instructions

Drain and rinse the chickpeas in a colander. Shake off excess water.
Put chickpeas in the air fryer basket. Set the air fryer to 400 degrees F and place basket in the air fryer for 5 minutes.
After 5 minutes, remove the basket with the chickpeas and lightly spritz with cooking spray. Return the basket to the air fryer for an additional 10-12 minutes, shaking the basket every 5 minutes.
While the chickpeas are cooking, mix together sweetener and pumpkin pie spice in a small bowl.
When chickpeas have reached your preferred level of crispness, pour into a bowl. Very lightly mist the chickpeas again with cooking spray. Sprinkle with the pumpkin pie spice mixture. Toss to coat.
Store up to one week in an airtight container.

    What if you don’t have air fryer? Can you use sweet and low? Other spices? I like pumpkin but my family doesn’t. Also what if you don’t want it too crunchy?

      Hi Diana, you can bake the chickpeas in your oven at 425F but it will take 30+ minutes. Be sure to stir them every 10 minutes and monitor them for crispness. You can use any seasoning blend you want! I don’t use Sweet & Low but you could try it with that if you want. As for crunchiness, you can cook them to the level you like. You just want to make sure they’re fully dehydrated or they may get rotten if you store them outside of the refrigerator. Hope that helps!
