Are you looking for a mashed potato alternative? Or are you looking for a new vegetable side for your weeknight meals? This Mashed Cauliflower side is sure to win over your family and guests. Ready?! Let's do this!

I start with frozen cauliflower. You can either use frozen riced cauliflower or frozen cauliflower.


I boil the cauliflower with a small amount of chicken stock to give it even more flavor.


After you drain the cauliflower, add in your butter and milk or half & half. I added in lots of seasoning, since let's face it...it's cauliflower and its bland. Flavor is key in this dish.


To give this cauliflower a punch of onion flavor, I added in about 1 Tbsp. of chives that I had growing in my garden.

Now blend all the ingredients with an immersion blender until smooth. Serve with your favorite protein and another side dish and enjoy!

I love the slight onion flavor the chives give to this dish. If you don't like chives you can omit them and add in dry onion powder instead.

Ingredients

  • 1 10.8 oz. bag frozen cauliflower
  • 1/2 cup chicken stock
  • 1 Tbsp. Chives, cut into 1 in. pieces
  • 1 Tbsp. Butter
  • 2 Tbsp. Half & half or enough to make it smooth
  • 1/4 tsp. Garlic powder
  • 1/4 tsp. Paprika
  • 1/4 tsp. Salt
  • 1/4 tsp. Black pepper

In a medium pot, I boil the cauliflower with a small amount of chicken stock to give it even more flavor. Cover & cook for 15 minutes on medium heat, stirring occasionally.
After you drain the cauliflower, add in your butter and milk or half & half, seasoning and chives.
Now blend all the ingredients with an immersion blender until smooth. Serve with your favorite protein and another side dish and enjoy!
