Turmeric and Ginger Roasted Carrots

Easter is coming up, and I felt like it was time to start adding some more side dishes to my blog. Carrots are a great side dish for so many reasons. First, you can season them with so many different flavors. Second, they are super nutritious. Third, they are just so pretty!

Why I love carrots


Carrots are high in antioxidants, making them a perfect healthy choice. They are also a great source of beta carotene, so they’re easy on the eyes! Along with the beta carotene, they contain high levels of vitamin K and fiber, an important part of any healthy diet.


So, what do antioxidants do for the body?


Antioxidants are great for the body, because they help your body control the cell damage caused by free radicals, which are a major factor in illnesses such as cancer and heart disease.

Free radicals are present in digestion of certain foods and exposure to things such as tobacco and radiation.


Beta carotene is just one powerful antioxidant. It converts into vitamin A which is super beneficial in slowing cognitive decline. And, did you know that beta carotene can help with vision troubles?

So, as you can see, carrots are a great source of nutrition! 

What else is there to love about these roasted carrots?


Turmeric - another powerful antioxidant that has been shown to reduce the Alzheimer’s and heart disease.


Ginger - in addition to being an excellent antioxidant, ginger can also prevent nausea.


Honey - Did you know that local honey can help with allergies? Crazy right???


So, really, as you can see, this super healthy roasted carrot recipe is basically one giant superfood side dish! It can help keep you from getting sick, it tastes great, and heck, it may even keep you seeing better longer!

Turmeric and Ginger Roasted Carrots

Ingredients

  • 1 lb. carrots, peeled and sliced, on a bias, into ¼ - inch pieces
  • 2 TBSP avocado oil
  • 1 tsp coarse Kosher salt
  • ½ tsp fresh ground black pepper
  • 1 tsp ground turmeric
  • ½ tsp ground ginger
  • 1 TBSP honey
Instructions

Preheat the oven to 375°F.
Line a baking sheet with aluminum foil, and toss carrots with oil, salt, pepper, turmeric, and ginger. Place in the oven and roast for 10 minutes.
Drizzle honey over the carrots, and toss to coat.
Roast another 6-8 minutes or until the carrots and browned and crisp-tender.

    So glad you included black pepper... that boosts the turmerics anti inflammatory properties by 2000 times!!

      Glenna, the turmeric not spicy at all. It just adds a very unique flavor with lots of health benefits! The black pepper, of course, will add a bit of spice, but you can certainly reduce the amount or omit altogether. I hope you enjoy!
