Do you struggle to get your veggies in? I know I do! For me personally, I find it really hard to make a lot of vegetables “taste good.” I know it is just something you have to eat, but I would like to enjoy them as much as I can! I eat plenty of cold carrots with dip, but cooked carrots are the forgotten veggie! Don’t sleep on them! If you need a super simple side dish for your Thanksgiving celebration, give these honey roasted carrots a try! They are sweet, salty, and savory and nearly impossible to mess up. What more could you ask for?

Ingredients
- 2 large carrots, washed, peeled & chopped
- 1/2 Tbsp olive oil
- 1 Tbsp honey
- 1/2 tsp garlic powder
- 1/4 tsp parsley
- Salt & pepper to taste
Instructions
- Preheat oven to 400°.
- In a small bowl, combine chopped carrots, olive oil and honey.
- Add in the garlic powder, parsley, salt & pepper and stir until evenly coated.
- Place on a baking sheet and roast for 25-30 minutes or until tender.
- Broil for an additional 5 minutes if you want them browned!
