Another delicious vegetarian and gluten free dish! These roasted carrots are perfectly sweet and spicy at the same time. Harissa is a delicious sauce that packs flavor and just enough spice. If you prefer more of a kick, you can always add cayenne pepper or hot sauce. This dish pairs perfectly with meat roasts, such as brisket. They should be tender, but still have a bit of a bite so they aren't complete mush. I recommend 12 to 14 minutes in the oven, but this will vary based on the size of your carrots.

Ingredients
- 1.5 lb baby carrots
- 2 tbsp harissa
- 2 tbsp honey or pomegranate molasses
- 1 tbsp butter or ghee
- salt to taste
Instructions
- Heat oven to 475F
- Toss carrots in the harissa, honey or pomegranite molasses, and butter
- Once they're coated, spread them out on a baking sheet
- Cook for 12 minutes, turn and cook for an additional 2-3 minutes if needed
- Season with salt to taste
