Roasting carrots caramelizes them and brings out their natural sweetness. This makes Rainbow Carrots a perfect, colorful side dish for almost any main course! A bit of freshly chopped parsley adds both a finishing touch of flavor and a beautiful garnish. Use this recipe all season long and enjoy the incredible flavor and wonderful health benefits. My favorite thing about oven-roasted rainbow carrots is the color that they add to the table! The shades of orange, yellow, red, and purple are a feast for your eyes and your stomach. All carrots are high in fiber potassium, and vitamins C and K, but each colorful carrot brings their own nutrition to your diet. This is classic dish that you’ll find at both fancy holiday events and on a simple weeknight dinner table! Having a go-to recipe in your back pocket makes whipping up a batch of perfectly roasted carrots whenever you’d like. For this dish I use the carrots as a side dish as in I served at a private event beef fillet with some bok choy and these roasted honey glazed carrots. Of course you can use this recipe with just your regular carrots if you can’t find colorful carrots at the supermarket but the Colorful carrots give an amazing pop of color to the table and not to mention the added nutritional benefits.Just as a side tip I like to glaze my carrots with honey but you can also glaze them with date honey or even a balsamic reduction which gives a nice tartness to the dish here I use honey and time which is an amazing combination but if you’d like other herbs such a sage or rosemary it will also give the carrots an amazing taste.

Ingredients
For the glaze
  • 2 bags colorful carrots
  • 1/2 bunch thyme
  • 3 tablespoons honey
  • olive oil
  • salt/ pepper
Instructions
For baking
Heat the oven to 325°F and place the carrots on a sheet tray with parchment paper. After the carrots are peeled and washed place the carrots on the shoe tray and season them with 2 tablespoons of honey, thyme, salt, pepper, and a nice drizzle of oil oil. Cover the sheet tray with aluminum foil and bake for 45/ 50 minutes. (Or until tender)
once the carrots are cooked:
heat the oven to 450 degrees / or top broil
remove the aluminum foil, drizzle again with honey
and broil/ or bake at higher for another 5 minutes.
This will give the carrots that nice glaze that we want from the honey.
and that’s it, either serve it as a side dish at the center of the table, or serve it with your main.
they go perfectly with fish or meat!
