Honey Glazed Carrots Easy Last Minute Recipe

We are often busy and find ourselves needing to whip up a last minute vegetable for dinner. Carrots are one of my favorites so I love this easy recipe. I especially love it in the summertime when I can find amazing carrots of all colors at the Farmer’s Market. Did you know that there are five main types of carrots and within each type – many varieties! Most will work great with this honey glazed carrots recipe.

Cooking Instructions

First, Peel the carrot and slice them thinly. It works best to slice them on the diagonal because the pieces are larger in size but still stay thin. For you cooking buffs, this is commonly known as cutting on the bias.

Second, Melt and heat the butter over medium high in a large skillet. Add the vegetables and cover with a lid. Let cook without touching for five minutes.

Third, Remove the lid and gently stir the contents of the skillet. Add the salt, honey and brown sugar to the skillet and stir in to the carrots. Continue to sautee without covering for about 5 more minutes. The sauce will become a caramel color and bubble a bit. Once they are a crisp but still tender consistency, they are done.

Serve the honey glazed carrots right away. They are best straight from the skillet to the plate. We like them best with a meat of choice and wild rice.
