Garlic and Herb Carrot Fries
These baked carrot fries have just enough crisp, are smothered in garlic and herbs; making them a healthy spin on a classic favorite, without sacrificing flavor!
Hi, my name is Kristina and I’m a french fry lover. Fries are my weakness, end of story. I don’t discriminate… I love the natural cut, shoestring, wedges, sweet potato fries… you name it, I love it!
There are two problems. 1. Ordering french fries out risks the chance of gluten cross-contamination because they’re often fried in the same oil as the onion rings (yeah, kind of gross…I know!) 2. Things that are fried are not healthy for you.
So now I typically always make my own fries at home… baked! Sweet potato fries are my go-to, but I decided to mix it up and make them with carrots! Carrots?… yes, carrots! Before you give me an eye roll, give these bad boys a chance! Carrots become very sweet when cooked, and once you coat them with garlic and herbs they’re to die for!
Next time you’re craving something salty and crispy, I say grab your peeler and make some carrot fries!

Garlic and Herb Carrot Fries

Ingredients
- 1 pound carrots, I used the rainbow blend
- 1 1/2 Tbsp olive oil
- 1/2 tsp black pepper
- 1/4 tsp coarse sea salt, plus more to taste
- 3 Tbsp grated parmesan cheese, optional
- 2 Tbsp fresh Italian parsley, chopped
- 1 garlic clove, minced
Instructions
- Preheat oven to 400 degrees.
- Line a baking pan with parchment paper and set aside.
- Cut the peeled carrots into even size sticks, about 4 inches long and ½ inch thick.
- Place carrots into a bowl and drizzle with olive oil.
- Sprinkle with sea salt and black pepper.
- Stir carrots to evenly coat with olive oil and salt/pepper.
- Spread the carrots out on your lined baking pan. Make sure they aren’t overlapping with each other.
- Put in oven and cook for about 25-35 mins, flipping the carrots halfway through to make sure they cook evenly.
- Keep an eye on the carrots, as every oven cooks differently. Cook until carrots are tender and browned on the edges.
- In a large bowl, mix together the cheese, garlic, and parsley. Add the warm carrots and stir to coat.
- Add more sea salt depending on taste.
