I know, some may dislike cabbage, I on the other hand sit on the opposite side of the spectrum, I love cabbage, especially when it’s roasted! I think it gets a bad rap, like brussel sprouts. I mean, have you ever been to a restaurant and seen roasted cabbage on the menu? I haven’t but I think it should be!


This recipe is easy and my family loves it. I tend to go a little over kill on the garlic because we love it so much. The great thing about this recipe is that you can season it any way you wish. We like lots of garlic and spicy herbs and I either serve it as a side or pile it high with more roasted veggies and salsa as a main course. This time, I topped the cabbage steaks with chicken carnitas and guac.


Baking the steaks for at least 30 minutes produces a softer cabbage. We like it crispy around the edges so I typically bake them a little longer and flip them to roast and achieve crispy edges on the opposite side. It truly is yummy!

Ingredients
For the cabbage steaks
  • 1 cabbage
  • 4 minced garlic
  • 1/4 cup avocado or olive oil
  • 1/4 tsp cumin
  • 1/4 tsp paprika
  • 1/4 tsp “Everything but the elote” seasoning
  • salt to taste
  • red chili pepper flakes to taste
  • cracked pepper to taste
Instructions
For the cabbage steaks
Pre-heat oven to 400° F
Line a baking sheet with parchment paper.
Slice cabbage into 1/2 in slices & place on baking sheet.
In a bowl combine the garlic, seasonings, oil and mix well.
Brush seasoning mixture on both sides of cabbage slices.
Bake for approximately 30 minutes on each side or longer to achieve desired color.
Enjoy as a side dish or main dish!
