Cooked Black Beans

Beans are one of my favorite low-cost ingredients. They can be used in so many ways and are full of protein. This recipe can be served as a dip, as a topping on a taco, or a soup if you add more liquid. I enjoyed this on its own when topped with sour cream, cilantro, and onions but I'll be adding this to my heuvos rancheros and tacos or burritos moving forward.


You can also add chicken if you'd like but it is super filling on its own.

Ingredients

  • 1 red onion
  • 1 tbsp olive oil
  • 4 garlic cloves
  • 4 cans black beans
  • 1 tbsp paprika
  • 1/2 tbsp cumin
  • 1/4 tbsp cayenne pepper
  • 1/2 tbsp salt
  • 1 lime for serving
  • 500ml chicken or veggie stock
  • cilantro to garnish
  • sour cream to Greek yogurt to garnish
  • feta or cojita cheese to garnish
Instructions

Heat olive oil in a large pot
Dice the onion, reserving some for garnishing
Add the onions & garlic cloves to the pot
Add the beans and the spices and saute
Add the chicken or veggie stock and bring to a boil
Let simmer for about 10-15 minutes then take off the heat
Remove 2-4 cups of beans and set aside
Use an immersion blender to blend the soup then add back in the beans
Squeeze fresh lime in to serve then garnish with more onions, cilantro, feta cheese or cojita, and yogurt or sour cream
Tips
  • Add flour to thicken
