I like to make this as a weekend brunch option, and serve it with plenty of bread to mop up the sauces. You can add optional toppings like avocado, feta, yoghurt and coriander. The recipe is easily halved for a single portion or doubled for a larger crowd. The sauce can also be made and stored in the fridge (at the sated before too crack the eggs in).

Ingredients

  • 4 large eggs
  • 1 tablespoon olive oil
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced zucchini
  • 1/2 cup diced red onion
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup cooked black beans (canned or homemade)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro or parsley, chopped (for garnish)
  • Crumbled feta cheese (optional, for garnish)
  • Sliced avocado (optional, for serving)
Instructions

Heat the olive oil in a large frying pan over medium heat.
Add the diced red bell pepper, zucchini, and red onion to the pan. Sauté for 3-4 minutes until the vegetables start to soften.
Stir in the diced tomatoes and minced garlic. Cook for an additional 2 minutes, allowing the tomatoes to release their juices and the garlic to become fragrant.
Sprinkle the ground cumin, chili powder, paprika, salt, and pepper over the vegetable mixture. Stir well to evenly distribute the spices.
Add the cooked black beans to the pan. Mix everything together and let it cook for another 2-3 minutes until the beans are heated through.
Make four wells or indentations in the vegetable mixture using a spoon. This will create spaces for the eggs to cook in.
Carefully crack one egg into each well, ensuring the yolk stays intact.
Lower the heat to medium-low, cover the pan with a lid, and let the eggs cook for about 3-5 minutes until the whites are set but the yolks are still slightly runny. Adjust the cooking time according to your preference for egg doneness.
Once the eggs are cooked to your liking, turn off the heat.
Garnish the dish with chopped cilantro or parsley and crumbled feta cheese (if using).
