Autumn is all about comfort and cozy food and this super creamy soup is a delicious combo of nutritious and comforting ingredients, perfect for a healthy midweek family meal.

Also being Halloween so close now, I’ve decided to give it a spooky look by using kefir.

A spider-web made of kefir was a huge success with the kids and we even had a little family competition as we all tried out to make designs on our soups.

I find this is also a great bonding activity in addition to get the kids more involved in the food they are eating. Having fun with food could also help with picky eaters.

  • 2 big tomatoes
  • - 2 sweet potatoes
  • - 100gr/3.5 oz red lentils
  • - 1/2 onion
  • - a few sage leaves
  • - 1/2 vegetable stock
  • - extra virgin olive oil
  • - salt
  • - paprika
  • - kefir for the design
Instructions
Method
Peel the sweet potatoes and chop them. Chop the tomatoes, the onion and the sage leaves.
Pan fry with extra virgin olive oil until the veggies turn soft. Add the red lentils, the salt, the stock, the water enough to cover the veggies.
Cook with the lid on until all the veggies and the red lentils are cooked.
Use a food processor to turn your soup into a cream. Add more water if necessary. Then plate it.
Use kefir to create some circles and a dot in the centre. Use a toothpick from the center to the last line to create your spiderweb design.
Have fun with all the family, you can also have a design competition to add fun to your dinner.
