Ingredients

  • 1 red onion, thinly sliced 
  • 2 red pepper, sliced 
  • 4 garlic cloves, diced 
  • 2 large  sweet potatoes, in chunks 
  • 1 tbsp olive oil
  • 1 tbsp Paprika 
  •  2 tbsp peanut butter 
  • 1 tin of chopped tomatoes
  • 1 tin of chickpeas
  • 1l boiling water
  • 1 stock cube
  • 1 tbsp lemon juice
Instructions

Heat a pan over medium heat and add the olive oil. Add the onions and pepper and fry for 10-15 mins, stirring occasionally, till softened.
Then add the garlic and paprika and continue to cook for another couple minutes.
Drain the chickpeas and add alongside the tinned tomatoes. Then add the water, peanut butter and stock cube - making sure it dissolves. Finally add the sweet potatoes and mix everything together well. 
Let simmer for 30 minutes until the sweet potato is tender. Taste and season with salt and pepper. Stir in the lemon juice and serve.
