Sweet Potato, Chickpea, Peanut and Red Pepper Stew

Ingredients
- 1 red onion, thinly sliced
- 2 red pepper, sliced
- 4 garlic cloves, diced
- 2 large sweet potatoes, in chunks
- 1 tbsp olive oil
- 1 tbsp Paprika
- 2 tbsp peanut butter
- 1 tin of chopped tomatoes
- 1 tin of chickpeas
- 1l boiling water
- 1 stock cube
- 1 tbsp lemon juice
Instructions
- Heat a pan over medium heat and add the olive oil. Add the onions and pepper and fry for 10-15 mins, stirring occasionally, till softened.
- Then add the garlic and paprika and continue to cook for another couple minutes.
- Drain the chickpeas and add alongside the tinned tomatoes. Then add the water, peanut butter and stock cube - making sure it dissolves. Finally add the sweet potatoes and mix everything together well.
- Let simmer for 30 minutes until the sweet potato is tender. Taste and season with salt and pepper. Stir in the lemon juice and serve.
