Crockpot Sweet Potato Chili

I make this recipe every year once the leaves start to fall. It's great to make a big batch, keep in the freezer, and heat up on a rainy day! It's a big hit in my family. The sweet potatoes add a great touch that isn't too overwhelming.


Both adults and kids love this recipe, it is a favorite for all ages! This makes the perfect lunch to make ahead then quickly heat up and add toppings of choice. Trust me, it's delicious and I personally do not get sick of eating it every day in Fall.

Ingredients
Crockpot Sweet Potato Chili
  • 3 cans of beans (I use black beans, kidney beans, and red beans)
  • 3-4 medium sweet potatoes (chopped)
  • 2-3 medium bell peppers (chopped)
  • 1 yellow onion (chopped)
  • 1 tbsp garlic
  • 1 packet of chili seasoning
  • 1 container of vegetable stock
  • 1 16 oz can of crushed tomatoes
  • 1 10 oz can of tomato paste
Instructions
Crockpot Sweet Potato Chili
Throw all ingredients into crockpot, mix well, and put on high for 3-4 hours
Tips
  • In the picture I used cheese, sour cream, green onions, and avocado for the topping
  • Store-bought or homemade vegetable stock works fine
