This might just be my new favoruite recipe! This slow cooker three bean chili is so comforting and packed full of delicious flavours. I enjoy making a meatless meal every now and again and this chili recipe really hits the spot.

Tender vegetables, warm chili spices you know and love along with a delicious array of beans come together to create this hearty meal.

Serve it up with some crusty bread and top with sour cream (or plain Greek yogurt!), chopped cilantro, pickled jalapenos and shredded cheese for a tasty and filling meal. Make this three bean chili today! Enjoy!

  • 1/2 onion, diced
  • 1 large green bell pepper, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 Tbsp of each; paprika and cumin
  • 2 Tbsp chili powder
  • 2 tsp of each; salt and pepper
  • 1 can Rotel with juice
  • 1-14 oz can kidney beans, drained
  • 1-14 oz can black beans, drained
  • 1-14 oz can chili beans with juice
  • 1 can mushrooms, drained
  • 3 Tbsp tomato paste
  • 2 cups vegetable broth

To your slow cooker, add all of the above ingredients and spices.
Give everything a big stir to ensure everything is fully incorporated.
Cover with the lid and cook on low for up to 6 hours,
Remove and serve with crusty bread. Enjoy! So easy!
