Lentil Curry Vegetable Soup

This is a delicious and cozy soup to eat all year long. It is full of vegetables and is incredibly tasty. Lentils are one of the most common foods eaten in the healthiest regions of the world.


My toddler ate every last bite of this soup so it is not spicy and he had no idea how many vegetables he was eating. I am going to make another batch tomorrow because I love having it in my freezer for a rainy day! This is another recipe that you can use with leftover vegetables in your fridge. In this particular recipe I used broccoli, spinach, kale, green beans, and cauliflower. It was truly delicious and nourishing.

Ingredients
Lentil Curry Vegetable Soup
  • 1 yellow onion, diced
  • 1 large carrot, diced
  • 1 celery stalk, diced
  • 3 tbsp diced garlic
  • 2 tsp minced ginger
  • 2 tbsp yellow curry powder
  • 1 tsp turmeric
  • 1 1/2 cup lentils
  • 32 oz vegetable stock
  • 1/2 cup coconut milk
  • 1 cup finely chopped vegetables (your choice)
  • 1/2 cup cilantro, chopped
Instructions
Lentil Curry Vegetable Soup
In a crockpot, add all ingredients except the coconut milk.
Cook on high for 4 hours and then turn to low and add coconut milk for 1 hour
Garnish with cilantro
Tips
  • This is a customizable recipe where you can use whatever vegetables you have on hand. This recipe is very forgiving. Some vegetable suggestions include broccoli, green beans, corn, zucchini, kale, etc.
