The Best Crockpot Beef Stew

Okay it is cooler weather and that means comfort food recipes. Our number one comfort food recipes is definitely soups and stews. This beef stew recipe is so comforting and tasty. It hits the spot on a cool rainy Fall day.

Potatoes, carrots, celery and onions fresh from the garden go into my stew.

I dice the roast up into cubes. You can buy stew meat all cut up too. Our store had some English roasts on sale so that is what I used.

I peel and slice all the veggies up into similar sized pieces. That helps everything to cook about the same time.

I put everything in the crockpot.

Add the seasonings and broth. And let cook for 6-8 hours. Yumm! I put mine over fresh biscuits. My hubby likes his with the biscuit on the side.

Ingredients
Prepare the veggies and meat
  • 2 lb Beef Roast
  • 6 Carrots
  • 2 Stalks celery
  • 1 large Onion
  • Salt
  • Pepper
  • 1 Clove garlic- Minced
  • 4 Potatoes
  • 2 Cups Beef broth
  • 1 Cup Peas
Instructions
Preparing everything
Cut your roast up into bite size pieces.
And then peel and chop up your vegetables in to similar size pieces.
Add everything including garlic and seasonings to the crock pot.
Add the beef broth
Cook on high for 6- 8 hours
Add a slurry of cornstarch and water if you want to thicken it.
