Summer salads are my jam and the hot temps we’ve been getting had me craving a hearty summer salad so, I made a

𝕀 𝕑 π•š 𝕣 𝕒 𝕝 π•š 𝕫 𝕖 𝕕 𝕣 𝕒 π•š π•Ÿ 𝕓 𝕠 𝕨 𝕀 𝕒 𝕝 𝕒 𝕕 🌈 I love spiralized salads because they have a great texture, crunch and they last longer than lettuce because they don’t get soggy or wilt. For this one, I spiralized some of my favorite raw veggies like raw beets, cucumbers, and carrots. I also added ingredients like garbonzos, millet, raw pumpkin seeds and nutritional yeast as my protein because I didn’t feel like eating meat. This was one of the most fantastic salads I’ve made. I dressed it with my homemade spicy green goddess dressing. Can I say darn I’m proud of myself for this one πŸ‘ŒπŸΌIt was ahhhhmazing!


WHAT IS MILLET:

Millet is a grain, it’s gluten free, high in protein, fiber and contains higher amounts of essential minerals than rice, wheat and other grains. It has a nutty flavor that I absolutely love. If you’ve never tried it before, I recommend you try it. If you don’t like it, you can substitute with red quinoa.


This recipe is only for the salad, not the dressing but I have posted the dressing here on Foodtalk, it tastes wonderful. You can use any dressing you like though and also become creative with your veggies, use any veggies you like. This is a fun and also very flavorful salad, perfect for hot weather. Ingredients
For the salad
  • 1 spiraled English cucumberΒ 
  • 2 large spiraled carrots
  • 1 medium spiraled raw beet
  • 1/2 cup chopped green onion
  • 1/2 cup cooked MilletΒ (can also use red quinoa or Couscous)
  • 1 cup garbanzos
  • 1/2 cup sliced kalamatta olives
  • 2 tbsp nutritional yeast
  • 1/4 cup raw pumpkin seedsΒ 
  • Spicy green goddess dressing (opt. or dressing of choice)
Instructions
For the salad
Cook millet according to package instructions
Spiralize all veggies
Add them into a large salad bowl
Add the rest of the ingredients
Drizzle salad dressing over all ingredients
Toss to combine and enjoy!
