The tangy lemony dressing is toned down just a bit with a drizzle of honey, and that small touch of sweetness complements the salty feta cheese perfectly.

Begin by washing and chopping all of that beautiful fresh produce. For this salad you will need cucumber, radish, green onions, fresh dill and of course some feta cheese.

I prefer to slice the cucumbers and radishes as thin as possible. I think this makes the salad look the prettiest, and the easiest to eat.

  • 2 tbsp freshly squeezed lemon
  • 3 tbsp extra virgin olive oil
  • 1 tsp honey
  • 1/2 tsp salt
  • 1 tsp minced garlic
  • pepper to taste
Salad base
  • 1 cucumber
  • 5-6 radishes
  • 3 green onions
  • 100g grams feta
  • 1/2 cup chopped fresh dill

Wash and thinly slice the cucumber, radishes, green onion and dill.
Add the sliced produce to a large bowl and add in the feta cheese.
Whisk together the ingredients for the dressing and drizzle over the salad.
Toss until evenly incorporated and refrigerate for an hour or until ready to serve.

    I love radishes, however my significant other does not. What can I replace the radishes with.

      It tastes just as great without the radishes 😊 but if your want to sub for something I would think any crunchy and mild vegetable would work well.

    I make this with the ingredients listed plus thinly sliced jimaca and add kalamata olives. Keeps well also.
