Christmas Day Salad

My family and I celebrated Christmas a couple weeks ago and I made this salad. It was a huge hit! It tastes like Christmas and looks like Christmas with the mix of the red and green. I homemade the dressing but you can use store-bought if you would like. I recommend something with balsamic and honey to bring out the flavors of the salad. This salad served 8 people still with leftovers so if you are serving less you can halve the recipe and if you are serving more people you can double the recipe.

Ingredients
Christmas Day Salad
  • 3 cups mixed greens (kale, swiss chard, etc. -- your preference)
  • 3/4 cup crumbled goat cheese
  • 1/4 cup candied pecans
  • 2 pears, thinly sliced
  • 1/2 cup pomegranate seeds
Balsamic Maple Dressing
  • 1 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 tbsp maple syrup
  • 1 tbsp lemon juice
Instructions
Christmas Day Salad
In a large serving salad bowl, mix greens for the base of the bowl
Mix in dried pomegranate seeds, goat cheese, and pecans leaving a couple for a garnish
Place sliced pear on top of the salad and sprinkle on top remaining pomegranate seeds, goat cheese, and pecans
Balsamic Maple Dressing
In a glass measuring cup, mix all ingredients together
1/4 cup balsamic vinegar
2 tbsp maple syrup
1 tbsp lemon juice
Tips
  • If you don't have or don't like pears you can use apples
  • You can use a store-bought dressing if you prefer or can alter the homemade dressing to fit your preference
