Have you ever tried Asian Cucumber Salad?

Up until now, I had never tried this salad before, but I have seen many videos of it floating around the internet on how to make this and I was always intrigued to try it.

This was such a fun recipe to make and was also extremely tasty! I adapted a recipe that I found online to make the dressing less mild, as I wanted this to be enjoyed by my children as well. Cutting the cucumbers in this spiral way makes them very fun to eat.

I really enjoyed the flavours in this salad, and will definitely be making it again. I think it would make a great side to any Asian flavored dishes.

Begin by whisking together 1 tsp finely chopped garlic, 1 tsp Thai Sweet Chili Sauce, 1 tsp soy sauce, 1 tsp rice wine vinegar, 1 tsp brown sugar, 1 tsp sesame oil. This will be the dressing for the salad. Set the dressing aside and cut the mini cucumbers.

To make the spiral cucumbers place one mini cucumber in between two chopsticks. the chopsticks will act as a guide when cutting, as you don't want to slice all the way through the cucumber. Make vertical slices all along the cucumber up until you hit the chopsticks.

Flip the cucumber over and now make diagonal slices along the whole length of the cucumber.

Continue this technique on the remaining cucumbers.

Place the cut cucumbers in a shallow bowl. Its ok if some of them break into smaller pieces.

Pour the dressing over the cucumbers and gently toss until everything is evenly coated.

Garnish with some sesame seeds for added flavor and crunch.

This salad is impressive, and looks much more complicated to make than it actually was.

I love how the delicious dressing settles into the spiralized cucumber and adds great flavor to every bite.
