But I always make a double batch because it’s amazing with grilled chicken on top for a quick and healthy lunch!

Cucumbers, mint, cilantro, jalapenos, and red onions combine for a unique flavor combination.

Ingredients

  • Miniature cucumbers can substitute English hothouse
  • Red onion, thinly sliced
  • Jalapeno pepper, seeded and minced
  • Fresh cilantro, chopped
  • Fresh mint, chopped
Dressing
  • Lime juice
  • Olive oil
  • Water
  • Fish sauce
  • Pyure or equivalent low carb sweetener
  • Minced Garlic
  • Crushed red pepper
Garnish
  • Salted peanuts, chopped
Instructions
Dressing
In a small bowl, whisk together lime juice, extra light olive oil, water, fish sauce, garlic, Pyure, and crushed red pepper. Set aside.
Salad
Stir together the vegetables with the dressing. Garnish with chopped peanuts.
