Creamy Macaroni Salad

I always have a soft spot for a mayo based macaroni salad. It’s not very healthy so I don’t make it often but when I do, then I definitely indulge. I love to add lots of crunchy celery to my version. It helps to combat the heaviness of the mayo so you can eat more!


Macaroni salad is also perfect paired with bbq and one of the perfect dishes to bring along to a potluck. I suggest to reserve a portion of the sauce to mix in later as it can absorb all of the sauce and appear dry after it has sat in the fridge after a while. Ingredients

  • 8oz (227g) dry elbow macaroni
  • 6 sweet gherkins, finely chopped
  • 6-8 ribs celery, finely chopped
  • 3 scallions, finely chopped
  • 1/4 cup parsley, finely minced
  • 2 hard boiled eggs, finely diced
Creamy sauce
  • 3/4 cup mayo
  • 1/4 cup sour cream
  • 2 tbsps sweet gherkin brine
  • 1 tbsp red wine vinegar
  • 1/2 tbsp sugar
  • 2 tsps Dijon mustard
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried dill
Instructions

Bring a large pot of water to boil and cook macaroni to Al-dente stage following the timing on the package and adding an additional 2 minutes.
Drain when finished cooking and rinse under cold water to stop cooking and to wash off the starch. Set aside to drain
In a large mixing bowl, add in all of the celery, sweet gherkins, scallions and parsley. Add in the drained macaroni.
In a medium mixing bowl, mix together all of the sauce ingredients. Taste and ensure it’s a mix of sweet, tangy and well seasoned. Adjust seasoning as needed. Reserve 1/2 cup of the sauce to dress when you serve.
Add the sauce to the macaroni mixture. Mix well. Add in the chopped eggs and mix. Refrigerate for 4 hours or overnight.
When ready to serve, mix again and taste for seasoning. Adjust seasoning as needed because the macaroni will have absorbed the flavors and you don’t want it to taste bland. If it appears dry, mix in the reserved sauce before serving.
