Whether you dislike kale or if you are lover of kale like I am, you are going to enjoy this flavorful salad. It happens to be one of the easiest salads to make and all you need is a bag of Trader Joe’s shredded kale and a few other simple ingredients. It makes a perfect side for any meal and also a great & easy meal prep. All you really need to do is combine most of the ingredients before adding a couple more and calling it a day.
The only elbow grease you will have to do is to massage the kale, that’s right, a little massage. Massaging it will help infuse the kale with the lemon juice and oil and also helps break down some of the tough and fibrous characteristics of kale which makes it easier to chew and digest. This also means you will have a more tender salad.
I used the salad as a side dish to my copycat Salmon Santorini Bowl from Luna Grill. This has to be one of my top 5 lunches, it has so many delicious flavors. This recipe however is only for the kale salad not my yummy Salmon bowl but I do hope it inspires you to make your own.
Note: If you don’t like kalamata olives you can use any olives you prefer. You can also add more or less of any ingredients, make it to your liking. This will be a summer favorite salad!
